In part one of this video series, writer Mary Hurley invites us into her kitchen, where she makes yoghurt—from scratch. Many people don't realise it, but the process used to create yoghurt—bacterial fermentation—is a form of ancient biotechnology. Yoghurt is often prepared using store-bought ‘starters’; however, as Mary shows us, it's absolutely possible to harness the lactic acid bacteria needed to make yoghurt from other kitchen ingredients.
